Carrot Cookies

These are delicious and can be eaten for breakfast or as a snack/dessert. They can be made gluten-free and/or dairy-free as well!

Ingredients
  

  • 2 cups flour whole wheat/spelt
  • 2 cups rolled oats
  • 1 cup carrot grated
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 3/4 cup honey
  • 1/2 cup softened butter or coconut oil
  • 2 eggs
  • 1 cup chopped walnuts optional

Instructions
 

  • Mix together flour, baking powder and all spices
  • Cream together butter or oil and carrot
  • Add baking soda, honey and eggs
  • Stir in oats and nuts, if desired
  • Add dry ingredients into the carrot mixture and mix until combined
  • Grease/line a pan with parchment paper
  • Drop spoonfuls of the mixture onto pan
  • Bake at 350° for 13 min
