Protein Energy Balls

You only need 4 ingredients for this recipe and 10 minutes of your time.

Ingredients
  

  • 1/2 cup medjool dates
  • 1 cup rolled oats
  • 1/2 cup almond butter (can use any nut or seed butter)
  • drizzle honey (optional)
  • 2 tbsp hemp seeds
  • unsweetened shredded coconut (for topping)

Instructions
 

  • Soak the medjool dates in boiling hot water for 5 minutes. Drain and set aside
  • Combine the softened and drained dates, oats, almond butter, and honey; if using, in a food processor. Process until the mixture binds, around 3-5 minutes
  • Roll into 16 balls with your hands (use one heaping tablespoon per ball) until smooth
  • Roll the balls into shredded coconut or other optional toppings
  • Keep refrigerated in an airtight container for up to 5 days
