Carrot Cookies
These are delicious and can be eaten for breakfast or as a snack/dessert. They can be made gluten-free and/or dairy-free as well!

- 2 cups flour whole wheat/spelt
- 2 cups rolled oats
- 1 cup carrot grated
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 1/4 tsp ground ginger
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 3/4 cup honey
- 1/2 cup softened butter or coconut oil
- 2 eggs
- 1 cup chopped walnuts optional
Mix together flour, baking powder and all spices
Cream together butter or oil and carrot
Add baking soda, honey and eggs
Stir in oats and nuts, if desired
Add dry ingredients into the carrot mixture and mix until combined
Grease/line a pan with parchment paper
Drop spoonfuls of the mixture onto pan
Bake at 350° for 13 min
