Lentil Brown Rice Soup

This nourishing soup will warm your soul on a cold day.
Course Soup

Ingredients
  

  • 1 cup mixed dried lentils and beans I use Tru Roots Sprouted lentils and mung beans
  • 1/2 cup brown rice
  • 7 cups water
  • 3 carrots
  • 2 stalks celery
  • 1 cup chopped broccoli (including leaves and stems)
  • 1 onion
  • 1 clove garlic
  • 1 bay leaf
  • 1/2 tsp sea salt or to taste
  • 1/2 tsp black pepper
  • 1 tbsp turmeric
  • 1/2 tsp chili powder or to taste
  • 1 vegetable bouillon cube I use Organic Bouillon, low sodium Vegetable

Instructions
 

  • Chop vegetables and combine all ingredients including spices in a large stock pot
  • Bring to a boil and simmer for 1.5 - 2 hours
