1/2cupalmond butter (can use any nut or seed butter)
drizzle honey (optional)
2tbsphemp seeds
unsweetened shredded coconut (for topping)
Instructions
Soak the medjool dates in boiling hot water for 5 minutes. Drain and set aside
Combine the softened and drained dates, oats, almond butter, and honey; if using, in a food processor. Process until the mixture binds, around 3-5 minutes
Roll into 16 balls with your hands (use one heaping tablespoon per ball) until smooth
Roll the balls into shredded coconut or other optional toppings
Keep refrigerated in an airtight container for up to 5 days
