Sweet Potato and Broccoli Soup

Ingredients

large sweet potatoes
2
large carrots
1
head of broccoli
1
large onion (optional)
2
cloves of garlic
8
cups
vegetable broth
sea salt to taste
black pepper to taste
1
tbsp
turmeric
olive oil
Instructions
Peel and chop sweet potatoes and set aside
Chop broccoli, carrots, onions and garlic. Heat some olive oil in a stock pot and gently cook the raw vegetables until the onions are softened
Add stock and herbs
Add the 8 cups of vegetable broth, sweet potatoes, and turmeric
Boil until everything is soft (about 45 min)
Blend to desired consistency with a hand blender
Season to taste with salt and pepper
