Almond Butter & Flaxseed Cookies

This recipe is simple and nutritious and lasts for up to 10 days. It is gluten-free, high in fibre and refined sugar-free.

Cook Time 10 minutes mins
- 1 cup seed or nut butter of your choice
- 1/2 cup coconut sugar
- 1 egg
- 1 cup ground flaxseeed
Mix all the ingredients together until well blended
Roll into 20 (1-inch) balls. I prefer to use a small ice cream scoop that has a release button
Place on an oiled baking sheet
Flatten with the tines of a fork
Bake at 325℃ for 10 minutes
